You can still remove the nasty thing, just follow these simple steps:
1. BEFORE INSTALLING THE UPDATE back up ToolbarItems.nib from English.lproj (or other language of your choice).
2. Install the update
3. Open the old ToolbarItems.nib with Interface Builder
4. Disable and hide both Google boxed (uncheck Enabled and checkmark Hidden) and save the .nib
5. Open your newly made .nib via Show Package Contents and copy keyedobjects.nib over the one inside OldToolbarItems.nib in the new Safari.app
P.S. you can find ToolbarItems.nib inside English.lproj (or other language of your choice) of Safari.app (Control-Click and choose "Show Package Contents" to open it) and yes, you'll need Xcode's Interface Builder to edit those .nib files.
I like some of the features in Safari 3.0, but I definitelly don't like Apple imposing such a "feature" on me
